VINTAGE CONDITIONS

This wine has been sourced predominantly from selected vintages,known for producing quality sparkling wines.As a non-vintage style,complexity has been achieved with the inclusion of prior vintages to produce a wine of consistency and quality.

 

WINEMAKING

The Chardonnay and Pinot Noir grapes were selected from premium districts,including Buckland Valley (VIC), Cowra (NSW)and Adelaide Hills (SA).Harvested in the cool of night,minimal juice contact with the skins and gentle pressing produced juices of elegance,finesse and delicate fruit flavour.These juices were fermented separately using a yeast strain isolated in Champagne, to produce delicate base wines,which then underwent secondary fermentation in bottle.

TASTING NOTE

Colour:   Mid straw green with a fine and persistent mousse.

Bouquet: The citrus and toasted cashew nut flavours of Chardonnay are married to the fresh attractive breadcrust characters of Pinot Noir.

Palate: Elegant fruit flavours enhanced with creamy yeast autolysis providing depth and flavour.The wine finishes soft,crisp and clean. WINE DETAIL ANALYSIS Alcohol:12.0% Total Acid:6.3 g/L pH:3.22
