Locally hand crafted buffalo mozzarella salad, with toy box
tomatoes, Napoletano basil and extra virgin olive oil
(Zonin, Pinot Grigio, Friuli Aqileia DOC)
Aroma: Fruity, relatively full and unusually fine.
Body & Taste: Soft, fresh and light; tending towards a dry style.

Forest wild mushroom risotto with truffle essence
(Zonin, Ripasso)
Aroma: Intense and pleasantly vinous to the nose with outstanding fruitness and an appealing spicy vein
Body & Taste: Dry on the palate with a sultry, mellow and spicy taste and a fine, harmonious balance.

Ravioli stuffed with 24 month aged Parmesan creme brulee  morel mushroom ,
balsamic caviar and micro greens
Agnolotti stuffed with farmed rabbit and slow cooked pork
(Zonin Principi di Butera, Deliella IGT Sicilia IGT Sicilia)
Aroma: Long and persistent aroma with hints of almond flowers, intense spice.
Body & Taste: Dry, good structure and great round, it gives the palate a complex fruitiness, reminiscent of cherres in brandy, which alternate spices very pleasant and long lasting.

Tortino di verdure
Sfoglia of vegetables,12 month aged Parmesan ,toy box tomatoes and basil pesto
Sea Bass : Lardo wrapped with olio negra, nuts androasted forest mushroom
Lamb Chops: Grilled and served with cave goat cheese,black olive pate, pear glaze and spiced beetroot

Aroma: Broad and nuanced, with scents of wild berries
Body & Taste: Majestic and velvety, with rich fruity dried Grape tones.
